My love for Carrot Cake

Carrot Cake can seem like a task you not willing to tackle but its one you should try atleast once a year. Yes once a year.

Carrot cake is easy to make with the children when each of them are assigned a task. Children are naturally curious as to what mum is making and always want to hold or roll something when you in the greatest hurry.

The recipe below is the recipe I use fro carrot cake

Carrot Cake
Ingredients
2 Cups Grated carrots
1 cup of chopped nuts of your choice
(you can use pecan and pistatios or walnuts)

1/4 Pound butter
1/2 cup oil
1 1/2cups sugar
4 Eggs
1 teaspoon of vanilla essence

2 Cups self rising flour
1 teaspoon salt
1 teaspoon bicarbonate of soda / baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon nutmeg

Beat together sugar , oil and butter till fluffy add eggs and vanilla essence
sift in dry ingredients  and lastly fold in carrots and nuts.

bake in a well greased pan at 180degrees Cel. for 40minutes lowering temperature in the last 10minutes
By lowering the temperature your cake wont be dry.
