Caramel Swiss Roll

This is the simplest and easy to follow recipe 
This cake has no butter , a little tip , you can add anything to the filling of this swiss roll. Jam or custard even whipping cream is perfect 

You will need the following 
4 eggs
1 teaspoon vanilla extract 
3/4 cup of sugar 
3/4 cup of flour 
Pinch of salt 

Preheat oven to 180degrees 
Get a rectangular pan 30cm x 20cm 
Line pan with greaseproof paper. 
In a large bowl whisk eggs , sugar and vanilla till light and fluffy 
Sift flour and fold in to egg mixture. 
Pour into tray 

Bake for 12 to 15minutes 
While the Swiss roll is being baked prepare a parchment paper and sprinkle with castor sugar. 
Let cake cool for 10 minutes and turn out on parchment paper you had prepared. Roll the cake with a damn cloth that u place over the cake, roll and let cool for 20 minutes,  unroll and spread jam / caramel roll again and sprinkle to castor sugar. Enjoy with tea or coffee
