Custard Pillows is simple that's all I can really say.
Puff pastry and custard is all you need.
You will need :
Pastry
2 sheets ready puff pasty
For the Cream you will need:
1 cup / 250 ml heavy cream
2 Table spoons sugar
1/2 teaspoon vanilla extract
For the Custard Cream you will need:
1 large deep pot
1/4 cup sugar
2 eggs
1 egg yolk
2 tablespoons corn starch
250 ml milk
1 tablespoon butter
On a lightly floured surface roll out pastry sheets approximately 1/2cm thick and cut only 1 of the 2 sheets into rectangles what ever size you'd like , I usually cut the rectangles in 8cm long pieces and YES! I use a ruler to cut my little rectangles.
Once cut chill pastry in fridge and heat oven to 400F
Bake pastry for 15minutes
For cream , add cream , sugar and vanilla extract in mixing bowl and whip till peaks form , be careful to not over whip and make butter.
Now time to make the custard.
In the large deep pot , heat milk on low . While the milk is getting hot , in a separate bowl mix sugar , eggs , egg yolk & cornstarch.
Once milk is hot switch off stove , while mixing egg mixture add 50ml of the hot milk to the eggs .
This step comes with a warning if you don't beat the eggs will cook and spoil the custard.
Keep mixing the milk and egg mixture and add the rest of the hot milk in while still beating, now to cook completely , on low heat put the mixture back on the stove and allow to thicken while still stirring.
Sift custard and add in butter. Set aside to cool. cover custard with paper towel or clear wrap to prevent skin from forming on top.
To assemble
Take uncut pastry sheet that has been baked and flip it upside down. spread custard and place rectangular pastries on top. Add cream on top and sprinkle with sugar.
And that is how you have the easy custard pillows , there is easier ways of making the custard without the eggs , my mum as thought me all versions of making custard. Also the cream is optional and not advisable if its hot as the cream does melt and look terrible.
